That sounds so ridiculously pompous doesn’t it?

Hrrmmmm…let’s see:

9 small red pototoes, skins on and chopped. 1 small vidalia onion, diced. 2 large cloves of garlic, minced. 1 cup of red lentils. 2 cups chopped baby carrot. 1 large bay leaf.  a generous sprinkling of thyme. 2 cans of beef broth.

I sauteed the onion & garlic in some olive oil while I prepared the rest of the ingredients. Dumped potatoes, carrots, lentils, thyme and the bay leaf in the crock then when the onion & garlic was caramelized just enough, it went on top of it all. I then poured in the broth and set the temp to high. when everything is soft, I will mash it up, season with sea salt and pepper and add a can of fat free evaporated milk.

Voila. Rainy Day Potato Soup.
